Cassava Flour Pancakes with Buljol

Yields1 Serving

Pancakes
 3 Egg Whites (peek)
 3 Egg yolks
 ¼ cup MIS Coconut oil
 3 tbsp honey
 2 tsp MIS Vanilla Essence
 2 cups Milk
 2 cups MIS Cassava Flour
 2 tsp baking soda
Buljol
 2 cups Salt Fish boiled
 3 Tomatoes
 1 Cucumber
 1 Onion
 2 Scotch Bonnet Peppers
 3 Limes
 3 tsp MIS Ground Black pepper
 Salt for taste
 Parsley (finely chopped)

Cassava Pancakes

Add all your dry ingredients in a bowl

Separate the egg whites from your yolks

Whisk the yolks with your honey, essence, olive oil

Combine dry ingredients and egg yolk mixture and mix until its a creamy batter

Whisk the egg whites until peek when finish.

Gently fold egg whites into creamy batter

Heat pan over medium heat, add pancake batter with a ladle cook until golden brown

Fully cook your boneless Codfish then wash out the remaining of salt

Dice the cucumber, tomatoes,onions and scotch bonnet

In a bowl add lime juice,1 tsp water, parsley and salt to taste

Combine all ingredients in a bowl.

Serve chill or at room temperature
