MIS Chickpea Quiche

Not your traditional quiche. Egg free. Gluten Free.

Yields1 Serving
 1 ¼ cups Chick Pea Flour
 1 ½ cups water
 1 tbsp yeast
 1 tbsp Parsley
 1 tsp Thyme
 ½ tsp Ground Black Pepper
 1 ½ tbsp Extra Virgin Olive Oil
 1 ½ tsp Granulated Garlic
 ½ green pepper (diced)
  cup onion (diced)
 Salt to taste

Set your oven to 350C. Add water, chickpea flour, spices, herbs, nutritional yeast, and 1 tablespoon of oil in a bowl and mix well.

Heat 1/2 tablespoon olive oil over medium pan. Add garlic and diced vegetables and sauté 3-5 minutes.

Add vegetables to flour mixture and combine all ingredients together.

Pour batter into muffin tins.

Place in oven about 12- 15 minutes or until golden brown.
